Hillrock Solera Aged Bourbon Sauternes Cask Finish $89.99 - $89.99

Hillrock Estate continues to impress.  This award winning Bourbon is a treat by itself, but when you age it an extra 2 months in a Sauternes (a decadent dessert wine from the Bordeaux region of France) barrel you create an extra layer of nuance and enjoyment.  

We tasted through several different barrel options and found the one that perfectly marries this sweet, smooth, and complex Bourbon with the subtle marmalade, citrus, and spicy notes gained from contact with the Sauternes barrel.  This luxurious medley serves both the Bourbon drinker seeking contemplation and sheer drinking enjoyment alike.  

Other brands and bottlings finished in Sauternes barrels easily go for $100+.  While Hillrock is a brand that can be readily found, this unique bottling is limited.  We highly encourage you try it!

Located in New York state's fertile Hudson Valley, Hillrock is proud to be one of the few "field-to-glass" whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. By controlling every aspect of production from planting & harvesting heirloom grains, to smoking our malt, to crafting whiskies in our copper pot still, to aging in small oak barrels and hand bottling, they are able to create the highest quality whiskies reflecting the unique local terroir.

Hillrock will forever be linked to the late, great, Dave Pickerell who was the Master Distiller at Maker's Mark for 14 years.  Pickerell used his ingenuity and great knowledge to craft Whistle Pig, Hillrock and consult for many more brands.  His tragic passing last year came as a shock, but his legacy is tremendous.  We were lucky to host Dave for a Whistle Pig tasting at Bin 75 about 3 years ago.  Hopefully you were able to join us or meet Dave on another occasion.

-Majority corn and about 37% rye as the secondary grain.

-Control over the entire process from growing the grain to hand labeling the bottles.

-Copper pot stills used to create a softer distillate.

-No age statement is given because this is a Solera.

-Solera- a stack of barrels where a small portion of whiskey is removed periodically and new whiskey is added. No barrel is ever fully emptied, and age and nuance gradually increase over time. This ensures consistency and complexity for each bottling.  The average age is around 6+ years.

-After seeing time in charred new, American oak barrels, the Bourbon sees time in 20 year old Olorosso Sherry barrels

-Spends an additional 2 months in used Sauternes barrels (no producer name given) to add even more complexity
